You should also add the license into metadata for the asset packs:
"Edit asset pack->Metadata->Release Info->License for assets" It will increase the size of audience that will be able to find your art

Great asset but would it be possible for you to put the singular assets into their own files? Or is there just some workflow that I am not familiar with?

I'd like to update the pack, but I'm currently very tight on time, so I don't know when I'll be able to do that.
But in Unity, for example, it's easy to just select the desired file when you place it in the scene.

learning how to texture, wasn't able to change a lot of these in unreal. do I need to do anything special?

This asset aren't UV mapped, it has only materials. I don't know if is possible to do it in Unreal Engine.
